Depends on whether you're like me and just keep your entire day/week's worth of activity open all the time.
I tend to configure builds with two DIMMs because people are always concerned about having enough RAM. Assuming it's a standard mobo with 4+ DIMM slots, they can always add more (and they probably will, whether they need it or not).
I've used 16GB for the past 3-4 years (upgraded from 8GB when I started working from home). I probably won't upgrade anytime soon unless I find a legitimate, worthwhile use of a RAMdisk that isn't just for the fun of it.
