Season your ribs as normal and use a large bamboo skewer to hold the ribs in a swirl shape. I can place 6 racks on my WSM using this method.

this. i use a rib rack to put whole racks on mine with no troubles.

Have one, but it is a "hassle" to clean it afterwards. I know, soak it, then wash it... Just as easy to skewer the ribs.
