Seriously, though, the first step is to gauge an accurate viewing distance - then size, done mainly by analyzing the color/intensity/quality of the light coming from the galaxy as well as by comparing relative differences between the unknown cellestial body (in this case, galaxy/black hole) and others that are known.

Once the size, to scale, is known, they measure the time it takes for the stars closest to the black hole's event horizon to orbit one full revolution around the galaxy's center, and thus are able to extrapolate the black hole's rotational velocity.

Right, but isn't a black hole where the "known properties of the universe break down"?

If things (as we understand them) break down in a black hole, don't the laws of physics or even the universe not matter at that point?

To put it philosophically and in layman's terms, for all we know, shite can travel faster than the speed of light in/around a black hole because black holes are like "frick you" to science and the "restrictions/rules" of the universe, so anything goes.

No, the laws of physics as we know them do not cease to exist in a black hole. The confusion results from the fact that, because of the sheer mass of black holes, the gravity is so utterly strong that even light may not escape once it passes the event horizon. Nothing at all, in fact, may escape, but this is in line with the accepted laws of physics.

This is true. As I said, "the laws of physics as we know them," are just that. Since everything about black holes is theorized, it is very possible that different or undiscoverd laws exist within, but the evidence doesn't suggest that, is all.

Nobody knows, it's all theories.

I may be wrong, but I think that things just break down and collapse in on themselves due to the amount of gravity at the center.

But nobody knows (or will likely ever) know for sure.
