Need some help - shrimp jambalaya for 100

I usually use the calculator but need to use seafood due to lent. Gonna have to feed 270 baseball players and coaches next Friday for a high school tournament in Sulphur so was going to break out several pots and do some cooking but needing some help with a shrimp jambalaya recipe. Was thinking about just subbing shrimp for pork, sausage and chicken and going with the calculator but something keeps telling me that won't work. Any suggestions?

This is a disaster waiting to happen if you're trying to do a Cajun jambalaya. The meat is what gives you all the goodness at the bottom of the pot. Maybe just do a big pot of shrimp fettuccine instead??

We did a shrimp jambalaya for 500 people for a benefit my family did.
You just need to brown your onions alot more than usual and cut you liquid to about 1.5 to 1 because shrimp put off a lot of water while they are being cooked

So you just followed pretty much the recipe in the calculator from Stadium Rat with the change of protein? Also at what point did you add your shrimp, was wondering if adding them when I added my rice would cook them too much and make them tough. Also thought about adding some roux to my liquid for some addtional flavor but didn't know how that might turn out.

Fold shrimp in when the rice is done, or close to it. If you add them early, it'll be a mess. Google is your friend.
