Thanks, Gris. I have to say that peeling the crawfish took longer than I wanted it to, so I didn't use but a bit of the cheese in the pic (some of the parm). I had some grated cheddar that I ended up using.

It is very good, but it doesn't live up to bossflossjr's inspirational crawfish cheesecake pic!

Well, it looked great. That cheesecake is awesome. Emeril has a great recipe for crawfish/shrimp and andouille cheesecake with a sauce. Easy and tasty.
