Didn't see this thread just bumped the update one. Down 12+ but vodka and red wine are in short supply. Need some variety help. Burning out on eating the same thing day after day

I have been eating vegan basically every Mon-Thurs then do some fish, cheese etc. on the weekends. I have maintained weight while loosing considerable amounts of muscle and strength while gaining fat. My body composition has been changed quite a bit. My mid-section is bigger and my muscles are somewhat smaller and not as hard.
I have been drinking a good bit on the weekends so that can be attributed to a good bit of the fat gain but not all of it. I haven't eaten as much veggies as I should have but in order to get my protein intake up I had to eat more ezekiel bread etc.
If I wouldn't have drank as much and at more veggies I could see myself losing 5 or more pounds during lent. Mainly from muscle loss though because my body fat % wasn't very high before this. I would have offset some of the weight loss with fat gain though because all of the crap carbs and grains that are "soooo good for you"
I have also lost a good amount of my energy and am not liking that at all. My bowl movements are a uniform consistency between normal (solid) and very soft. Don't like this either.
My general mood and swings have been more severe and my resting heart rate is the same at 60 bpm.
I genuinely hate this diet and will openly rip people who think its the greatest thing ever.
I again, do admit that if I would have stuck with the vegan routine the whole way through, didn't drink and would have eaten more veggies I would have lost a good amount of weight and gained very little, if any fat. Losing that much muscle mass isn't good weight loss if you ask me. I don't think losing muscle, losing energy, having mood swings, stomach aches and hating my food/diet in general are good things either.
Mow I did enjoy a few vegetarian meals here and there but I have already begun planning my meals for post-lent.

I will never deviate (for an extended period) from my Paleo-diet aver again.
I will be re-reading this post after I post it to make sure I hit everything.
