isn't the entire point of making cheese processing it?

I see the point you are making. It is the Theory vs. Sci. Thoery argument. In lay terms it means one thing in the other it means something different. Processed in terms of "cheese" means hydrogenation of oils to make a product similar to cheese.

The Organic label pisses me off so damn much. And it is not that it is organic but what that one little word brings out in people.

This thread is hilarious. I click on it about every 5 to 10 pages, and the conversation changes so much. Now y'all are arguing over how cheese is made??

In all honestly, locally sourced > organic pre fab. I can inspect on the spot instead of off the truck.

Just throw em in one of those bubble wrap lined envelopes and we'll see how it works out. I'll shoot you a check. Or would you prefer payment in bitcoins?

The French supposedly know more about food than us, and they keep and sell eggs at room temperature. In the grocery stores, they're just on the open shelves.

That they do. They also don't store them in warehouses or mass ship them to all parts of of a country 10 larger than france.

yea, you don't need to refrigerate the eggs. we don't. we just take them straight from the coop and leave them on our kitchen counter. they are just fine. as i understand it, in the US, it's normal for eggs to be almost 45 days old when they reach a grocery store, thus the need for refrigeration
