Tip one. Don't get into a food discussion with a chef. A lot of food technically rots or degrades as part of it's process, before it is consumed.

Preserved food are not the same as they have always been. Sure, preserved food can be just as good. But when you talk about frozen pizza, it's a little different. I love this. Bourdain has stated pubicly that he is not really the biggest fan of cajun and creole cuisines.

As yes to whoever said it before the only people who would argue against this are the ones who are "emotional," the ones who are bothered that the city is loved by others and that no one gives two fricks about their shite hole of an existence. Yes New Orleans has plenty of faults so does every major city but at least it's a relevant city in the United States and not a blip on the map that no one would notice if it were gone. The po boys are better than anyone else's fwiw
