G Vice, I dry toasted it. Previously, I bought some toasted rice at one of the Asian markets. This was the first time I toasted it myself. I hate to brag, but it is awesome! I think toasting the basmati (I thought I had jasmine) made the whole dish.

Coater, I will probably do another Thai dish soon. While I have fresh lemongrass, galangal, and kaffir lime leaves, I might as well go all out. I think I used some of those in a previous laarb recipe, not sure.

impressive! we're going to a thai dinner tomorrow night which should be interesting. a thai chef is coming to one of our friends' home and will be cooking several courses. i'll try to sneak some pics without looking like a big ole' food nerd.
