Kamado Joe - Maiden Voyage

So my kamado joe came in today and I'm doing a "test burn"........the temp control on this thing is amazing.

I started the fire and got it up to 225 and held for a bit them opened the daisy wheel and went to about 500 for a while, then opened the vents and was at 800 in no time. Once to 800 i choked it down and was back at 500 in no time.

I'm not well versed in "smokers" but im impressed by the temp control.

My first low and slow will be Saturday as my heat deflector should be in by Friday. I am lost likely going to do a Boston butt first.

Anyone have any tips to share on kamados before my first cook?

Get a good thermometer. I was recommended the maverick et 732. At some point I'll get the digi Q wifi.

Def. get the Maverick thermometer w/ 'air' and food temp. probes. This is the one I have, had it for a while and it works great. I think I paid $45 total for it on eBay.

I would suggest buying a good thermometer. I have been cooking on mine for around 6 months now and love it more and more. I use the nakedwhizz website for a lot of recipes. I would suggest the following purchases in order: Thermometer, Heat Deflector, Cover, and the Pizza Stone. I cooked a Papa Murphy pizza last week and it was really good. Good luck as you will have a blast cooking with it!

I have been using the Digi Q DX2 for a while and have been loving it. The Naked Whiz site is really good. I cooked these baby backs this weekend and they were amazing. Checkout the "archive" section of the smoking meat newsletter for a ton of good recipes . Smoking Meat Archive
