It's a confusing paradox. Art teachers started out telling us to color inside the lines and then they all of a sudden switched to failing you if you draw inside the lines.

They're "Liberal" in the sense that they examine a broad spectrum of academia. I suppose you know this, already. One of the exam questions in a class of mine asks students to evaluate the "struggle between liberal and conservative ideologies and their practical applications" during, and as a consequence of, the Enlightenment. The initial responses were so littered with the kind of disambiguation you use in the OP that I had to include the following disclaimer: "NOTE: If the basis of your argument is the political philosophies of the modern American Democratic and Republican parties, as expressed by either the parties themselves, their leaders, or cable news networks, you will fail this portion of the exam."

Because the concept of "liberal arts" is older than the modern concept of the "liberal." And remember the "liberal arts," are supposed to be about what the free citizen studies, take that as you will.

"Renaissance humanists believed that human beings could be dramatically changed by education. They wrote books on education and developed secondary schools based on their ideas. Most famous was the school founded in 1423 by Vittorino de Feltre at Mantua, where the ruler of that small Italian state, Gian Francesco I Gonzaga, wished to provide a humanist education for his children. Vittorino based much of his educational system on the ideas of classical authors, particularly Cicero and Quintilian." "At the core of the academic training Vittorino offered were the 'liberal studies.' The Renaissance view of the value of the liberal arts was most strongly influenced by a treatise on education called Concerning Character by Pietro Paolo Vergerio. This work stressed the importance of the liberal arts as the key to true freedom, enabling individuals to reach their full potential. According to Vergerio, 'We call those studies liberal which are worthy of a free man; those studies by which we attain and practice virtue and wisdom; that education which calls forth, trains, and develops those highest gifts of body and mind which enoble men.' The liberal studies included history, moral philosophy, eloquence (rhetoric), letters (grammar and logic), poetry, mathematics, astronomy, and music. The purpose of a liberal education was thus to produce individuals who followed a path of virtue and wisdom and possessed the rhetorical skills with which to persuade others to do the same." -- Jackson J. Spielvogel, Western Civilization 7th ed., pp 352-3. The real question here is who has the vested interest in making sure that you don't learn to question authority?

Nice touch. May I ask, you have quite the grasp of education given these two threads today, what is your connection to education? This can be off board as well, I'm intrigued.
