Frying some speckled trout fillets and a pound of 20 -30s butterflied; hush puppies and potato salad as the sides.

I took the heads of the shrimp and now have a stock brewing that will be added to some dish this week.

There will be plenty for leftovers for tomorrow's lunch. She also has a hollow leg these days during this last trimester.

Fajitas. Bought some nice sirloin steak this morning. Cut it into thin strips. Marinated the strips for 2 hours.
Then carmelized chopped onion and 6 jap peppers (yep, my winterized plants in the garage are still producing....bless their Mexican hearts.) Threw in a bunch of Cumin powder.
Bought a can of no fat refried beans and some big arse whole wheat tortillas.

Microwave the tortillas to get them soft. Spread on the beans with a knife. Add the onion/pepper slurry. Then some picante sauce and the steak strips. Roll up and microwave till warm.

I just had 2 for early dinner a few minutes ago and they were great. Lucy will wake up in an hour and go for that.

Backup menu is:

Chicken salad sammiches
Deviled Eggs
Dirty Rice

I did fajitas with a london broil the other night and had the last one for breakfast this morning around 5 AM. My dogs enjoyed the last 2 pieces of steak with me. I am a huge fajita fan.

At Zoe's Kitchen grabbing my first meal in 2 days. Tomato bisque and a ham sandwich.

Grabbed tons of DayQuil/NyQuil, hot tea, hot cocoa, and a king cake from Calandros before I stopped here.
