I made a turkey and sausage gumbo today

I had an extra smoked turkey from christams we didn't eat.
Boiled it down for hr or so.

One thing I like about turkey over chicken not near as greasy.
And yes I used peanut butter in my roux.

Eat it tomorrow.
Smells like a king in there now.

I should have of what adding peanut butter will do to your roux.

Imdont like greasy oily gumbo which tends to be the way people most commonly f it up.
Turkey not greasy at all.

not the majority, but very common to use peanut butter in a roux.

I've heard of peanut butter and chocolate to describe the color of the roux. I guess someone misunderstood and used peanut butter and liked the taste? Glad they didn't say poo colored roux.

My dad use to add a couple tablespoons of mustarx when he was browning his onions for jambalaya....... peanut butter in the roux cant be that bad.

Never heard of that either do u add it to the flour/oil or use it in place of one of those?
