need a recipe for breakfast casserole with sausage and hashbrowns

Easy crockpot/make the night before recipe for a casserole. Anyone have one that they have used before and like? there are many variations online but I would like to know someone has done it with favorable results.

1 pound sausage
Diced onion
2 1/2 cups frozen hash browns
5 eggs beaten
2 cups shredded cheddar
1 3/4 cups milk
1 cup bisquick
Salt
Pepper
Cook the sausage and onions. Drain and put into a greased 9 x 13 baking dish.
Mix eggs, cheese, milk, and bisquick. Pour over sausage and mix well. Cover and refrigerate overnight.
Bake covered at 350 for 45 minutes. Uncover and bake 15 minutes.

Forgot that part. I just mix everything up together. The bisquick and eggs bind it all when you bake it.

Why don't you try a frittata instead of a casserole? It is kind of a cross between an omelet and a quiche, and pretty simple to make.
I made one this morning using leftover sausage and peppers. I reheated the sausage and peppers in a 9" skillet over a teaspoon of coconut oil on medium. Meanwhile I beat five eggs with a splash of water, and when the sausage and peppers were heated I poured the eggs over them. At this point you stir the eggs slowly to build up large curds and allow all of the liquid a chance to touch the bottom of the skillet. After about 5 minutes I put a little grated Parmesian cheese on top and moved the skillet to the oven pre-heated to 350. Let bake for 8-10 minutes. Remove from oven, slice and serve in pie shaped wedges.
