Make your husband smoke a Boston butt or brisket. Serve with rolls of some sort. If you have boudin, tell him to throw it on the smoker for the last 30 minutes or so.

The crawfish cardinale recipe is on p 53 of the recipe book with make ahead and reheat instructions.
The layered spread is on p 9. The mini muffin cake recipe is on p 44.
Scroll down the below link to the gnocchi wrapped in prosciutto. I had these at a party a few months ago and they were great. No toothpicks were used, though. The proscuitto stuck together just fine. The host made them the day before and served at room temp. They could be warmed in the oven a bit.

She also had these mini blts but she cut them in circles. They were good, too. She baked the dough the day before or a few days before and kept them in a plastic container.

She had some of these with tenderloin on them also. Could use brisket as well. Or, add sesame seeds to the dough and make mini muffs.
