One of my favprite fish too eat and catch.
We use fiddler crabs for bait and jig around pilings or structure.
Ive heard they taste like crabs because its their main diet.

I find they taste great. I usually only keep them when I'm catching redfish though. If I have an icechest full of stuff that's easy to clean, I'll probably throw the convict back.
