quote:That'll work. It's a very dry meat, especially with the skin off. I usually put them in jambalayas, gumbos, or fry them. Stewed down in a gravy would be just fine, I'm sure.

Marinate them in Italian dressing and red wine and roast them or saute them on the stove and make a pan gravy.

pheasant are my favorite of the wild fowl...very mild, white meat with just a hint of gaminess...
the meat will have almost no fat, so chose a method that doesn't dry them out...basically treat it like boneless, skinless chicken breast and you will be good...

Ok. Took them out today and went to put in the crock pot.....IT HAD A FOOT!!!! And the foot looked just like my sweet mr peepers' foot. I stood there dumbfounded. It was scaly and had feathers on it higher up near it's...knee? All else was nicely cleaned. The little breast made a perfect boat for onions and garlic. Initially, I just shoved the foot and all intothe crockpot. It stuck out, pointing it's little claw at me. I Took a deep breath and two kitchen towels and tried ripping it off. It felt Inhumane and savage. I twisted and
pulled and nothing happened. I took out my cutting board and my heaviest wusthof. Laid him on the board, lifted that knife over my head and WHAM!....nothing. Very dejected, I looked for my small camping ax. Couldn't find it. Finally decided on my kitchen shears and a can of green beans. Stuck that little leg inside and slammed down the can of beans on top of it. SUCCESS! Marrow was oozing out :vomit:
Anyways, TL;DR version, they are in the crock pot, bellies full of onions and garlic, laid on a bed of bell peppers, rubbed with Tonys, under a blanket of sliced onions. 2 packs of au jus gravy and 4 cups of water poured on top. Will let u guys know how it turns Out. Have pics of the foot Too. Will try and get the husband to post for me.

Poultry shears can handle that with ease, especially with a notched blade. Have cooked pheasant a few times. The way you are doing it sounds good. I brined them and wrapped bacon on the breast. I prefer duck, quail or doves by a country mile, but hunting pheasant is a good time.

The epic struggle with the bird foot and the husband comment lead me to believe that sir drinksalot is actually madame drinksalot. Least hope so.
