A good light dressing for shrimp salads over lettuce is as follows. It's really refreshing and goes well. I like it a bit strong so I go 2-1.

1/2 cup pecan oil (or whatever you have, canola, walnut-I find in this dressing olive oil is a bit strong.)

1/4 cup fresh squeezed lemon juice. (glad this thread popped up because I made this tonight with my first Meyer lemon off my tree)

1 tablespoon Dijon mustard (you can use stone ground or whatever)

Good pinch of sea salt, fresh cracked pepper

Mix lemon, salt, pepper and mustard in bowl, drizzle olive oil in while whisking until it emulsifies.

Be sure to dry thoroughly or spin the salad, pour a bit over the salad and toss, pour a bit over shrimp and toss then plate them together. You don't want too much, just enough to coat the lettuce and shrimp. Not swimming in it. Save what's left in a jar and shake well before using.

You can add chopped shallots, rosemary, thyme, dill etc... To change it a bit. You can put a bit of fresh grated horseradish, a teaspoon of mayo or Greek yogurt as well. Just the more you add the heavier and flavor changing you get.

Buy a good butter lettuce for this.

When I worked at Dempsey's, their green house dressing was my favorite on grilled shrimp salad. It just worked perfectly on it.

Green Onions
Olive Oil
Parmesan Cheese
Garlic
Salt and Pepper
.. I wanna say there's a touch of sugar.
