Mahi Mahi and amber jack recipes

We caught some yesterday and I offered to cook it for they guys. They want it grilled, which wasn't how I was going to do it, so I could use some tips. Mahi Mahi are filleted and some have the skin left on. Amber jack are filleted.
Also, any suggestions on easy appetizers with the fish would be welcome.

My tastes run north-south, i.e., very simple but what I like could eat every day.
Add garlic salt and pepper (to taste) and grill (450-500 degF) over some hickory chips. Offer lemon when served. Very simple, very good.

Baste with a little butter and lemon, too.

I usually put a garlic butter sauce on all my grilled fish, can't go wrong.
