I don't think you are being very realistic. I would love for cities in the South to become more cultured and more cosmopolitan in some regards, but the demographics simply won't allow for it.

Same reason you're not going to open a fine wine shop in rural Nebraska.

True story: When I was driving through Kansas last year, there was actually a gas station where you could do a wine tasting.

Wine tasting in a gas station convenient store just seems wrong.
