Turtle is divine. I liked the softshell better than the snapper but both are amazing.
Softshell was easier to clean, meat smelled cleaner and it was easier to detach from bone.

You can see them down through flooded woods sunning themselves on logs with their heads pointed up at the sun. Shoot them in the head from a distance and go pick them up.
