I know Iron Man/Iron Man 2, Thor, Capt. America, and the Incredible Hulk, but
1. which Hulk movie and
2. Is there a particular order that makes more sense as far as scenes after the credits, etc.?

1. The newest Hulk movie
2. Probably the order in which they all came out.

If you want to go chronologically, I would probably start with Capt. America. After that, I think they are all in modern time so I don't see how it would really matter.

Well I know at the end of Iron Man 2 they find Thor's hammer. Wouldn't make sense if you saw Thor before IM2.

I believe the order of events is (with the exception of WWII, but when Rogers wakes up):
Iron Man
Iron Man 2/TIH/Thor- Hulk events are happening during IM2 and Coulson has to run to NM to see Thor. So they kinda of overlap, but in that order.
Captain America-Rogers wakes up and S.H.I.E.L.D has the cube already.
ETA: TIH probably finishes before the end of IM2, since Stark is in the end of TIH.

Chronologically: CA, IM, TIH, IM2, Thor. That's the order of the timeline of the MCU prior to the events of The Avengers.

According to Feige, IM2 takes place before TIH.
The end of CA is after all of these.
In the beginning of Captain America, Red Skull attacks a village in Norway as he is desperately hunting for the cosmic cube. When he discovers the Cosmic Cube in the village, he immediately lectures his men and the guard of the cosmic cube about how it is from Odin's treasure room; the same treasure room in Thor.
so "chronologically" the early parts of Thor is first.
