Any way you do it is correct. I fry trout all the time and do whatever I'm in the mood for.
I fried some the other night dipped in crystal sauce and shaken in my batter bowl with straight cornmeal and I didn't hear any complaints.
I like to put garlic powder in the cornflour on occasion and sometime a good bit of black pepper.
I like a tartar sauce and ketchup or just straight up.

I can't understand why people here are fighting about mustard.
Clearly we have different tastes.
Some people like skinny chicks, some like them athletic and some like them FAT.
People just have different taste.
Cook the way you like to eat it.

I like a big gal on occasion myself.

I always mustard batter my trout (all fish really) and use Zatarian's Seasoned fish fry
This, I did this today for lunch. Beer first, then mustard with some Crystal hot sauce. Dredged it in Zatarian's. Was very good
