Then you've never had jambalaya, my friend.

You cook down the bacon, then throw out the bacon (or make a sandwich), then use the bacon fat to cook the meats for the jambalaya.

Anyway, you do use bacon in jambalaya.

i will say less than half of the recipes i have seen use bacon.....Most use boston butt or some other fatty pork.

I substitute Boston Butt, it's plenty fat enough and does not add more sodium.
