Nothing super original here, but all proven and widely liked dishes...(in no particular order)

Gumbo
Steak and potatoes
Lasagna
Chicken spaghetti
Fried catfish and hushpuppies
Grilled burgers and sausages with potato salad
Slow cooker roast, homemade gravy and mashed spuds

Little more difficult...

BBQ shrimp, NOLA style
Crawfish etouffe
Smoked brisket or tri tip
Smoked salmon
Beef Wellington

Real casual...

Soft and crunchy tacos...build your own (lay out different ingredients)
Homemade pizza

Quite a few of the dishes mentioned above could be prepared before your guests arrive, which should help you out the day of...unless you're trying to retreat to the kitchen away from your in-laws.
