Whats the purpose of seperating meats and veggies? I have always had/made them with everything mixed and they come out fine. Also relevant to this thread, battered and fried kabobs are the bomb.org.

I'll usually nuke my veggies(tri color peppers, onion, tomato, mroom) just a minute before I put them on the kabob. This way i can put them all on the kabob and my veggies are tender, how i like them and my steak isnt overcooked.
pineapple is good with chicken especially seasoned with jerk seasoning.
oranges are good with pork, especially with blackened seasoning
bacon wrapped meats & veggies
