What you cookin' for the game?

I'm debating between chicken/sausage gumbo or fried white perch. Give me some ideas.

Might have to go Jambalaya........Gumbo sounds good too, but I'm not in the mood.

I'm thinking I'll do a brisket on the pit and some rice dressing & tater salad on the side.

Start the brisket at about 8 in the morning so its falling apart by the time we're ready to eat.

Fried sac-a-lait covered in crawfish etouffee sounds awesome too but no sac-a-lait in the freezer now.
