Read the recipe...better yet, try it.10 miuntes soak time does nothing but coat the sides of the steak.The cooked part has a nice,seasoned flavor...the middle 2/3's remains rare.

Slice thin, dip in wasabi and soy sauce. Enjoy

The salt in the marinade will draw moisture out and the acidic nature will attack the meat on a molecular level and make it less fresh and less tender.
