Nobody likes whole fried catfish? I love it but we always filet it and fry it since the majority of the house likes it that way.

I do with a light cornmeal crispy crust. I love the fried fins.

Love it. Especially the smaller ones but I'm the only one in my house who does.

That's the only way it was cooked in our house when I was a kid. My dad caught them and cleaned them by skinning and then just gutting them. They were fried whole in a black iron pot.

Back when I was a kid, not many people would filet fish, but after I started doing it, that is the only way I'll cook fish now. To hell with dealing with bones and uneven cooking with the thin tail meat and thick meat near the head area.
