Who remembers the pork chop sandwich at Joe D's Grocery on Jefferson near Government?
It was a bone in fried pork chop with BBQ sauce on a bun for .45. 2 was lunch for under a dollar.

I don't remember the pork chop but the fried chicken was the GOAT back in the day. The family would stop by there every Sunday after church to pick up a bucket.

Why would you serve anything with a bone on a sandwich?

Well if bothered you, you would have hated the "Chicken Loaf". It was 2 pieces of fried chicken in French bread wrapped up as a Po-Boy.

That was my first thought as well...it doesn't make sense.

That’s just how it’s done. I grew up eating a fried bone-in chop on bread. Why? because it was cheaper.

About .75 a pound cheaper is pretty minimal and you probably lose that difference in the bone weight.

Doesn’t make it any less dumb.

No, it doesn’t.

But they are damn good, just don’t eat the bone.

The bone is only on one side. Once you establish that, it's no big deal.

FWIW, LSU has been serving Manda's bone-in sausage on buns for years at the concessions.

My wife buys those small, boneless pork chops and has the butcher run them through the cubing machine. Then she fries them, makes gravy and serves them with mashed potatoes and baby peas. Leftovers are for sandwiches.

With mayo, a fresh tomato slice, it makes a pretty good sandwich.

Your not from the south are you? Soul food sandwiches commonly have bones.
