His father pushed him to be a straight arrow...sort of like sending a kid to military school to change them. That never deters true nature.
As for Kay?
Its easy to shut the door on her. I shut the TV off if Diane Keaton pops into the movie...only exception is the Godfather because of schadenfreude.

Well the reason why you poopoo it as overrated is because you've got the timeline completely wrong. He doesn't volunteer to kill two people 30 minutes into the movie; he volunteers to kill two people an hour and fifteen minutes into the movie. And there's a big difference between volunteering yourself to do it and actually going through with it. Michael's big moment in the restaurant doesn't come until roughly 90 minutes into the movie - more than halfway through the film's runtime.
So, yeah, it is a pretty big character transformation.

That one move by Michael saved millions of us watchers from hearing another word uttered by Kay that took away from the overall greatness of the actors in that movie.
She, as an actress, is the equivalent of the really dumb kid in class that brings down the grade curve.

He volunteered to go kill people, when his father could have kept him home. He was a war hero because he thrived in deadly situations. He volunteered to murder a cop. It wasnt much of a transformation. That was who he was. He was just subdued by his father, once dad wasnt calling the shots, he simply shattered everyones misconceptions about him
