Obvious barometer, looking at 28-32" of mercury for those measurements. Plus the more obvious thermometer.

Using change in temp to measure change in volume of a liquid. Charles Law. Boyles Law. It's science.
v1/t1 = v2/t2
p1/v1 = p2/v2

My guess is that it's used to determine what an unknown substance is by looking at its behavior and then consulting a chart with known values.

I looked at it for about 2 seconds and that's my guess. I'm probably wrong, but that's my guess.
