It’s obvious he’s very good & 5 star worthy, but for being #1 overall in the nation, there’s not that thing (in my eyes) that POPS & makes you say WOW

You just compared him to the potential heisman trophy winner and can’t understand why he’s a 5 star?
Hes questioning why he's the top prospect period not a 5*. Daniels should be the Heisman winner and is the best player in the country imo. He still isn't rated the top prospect in the country or even the best qb. The rankings are based around the NFL draft. Best player doesn't equal best prospect.
Hes #1 overall because it's early and he's a qb with a huge following. He may stay there, he may not. Remember just a year ago Dominic Raiola was all the rage and the best since... Now he's not the top qb in the class. Underwood is the best since Lawrence yet in Lawrence's year Justin Fields was considered equal, even better by some. Things change, like narratives. Even those completely made up due to selective memory.

Jayden Daniels was the #1 dual threat QB in his class, albeit not the #1 overall recruit. At the same time, Daniels was much smaller than Underwood (listed at 175 out of HS vs. Underwood at 205.. as a junior). If Daniels had Underwood’s frame in high school I would imagine he’d have been rated much higher overall.
