What is a good beef sausage to use in jambalaya?

I've used Bryan's smoked hollow beef forever but it's gotten hard to find as no stores carry it here. Hillshire Farms' Beef doesn't taste as well. Any suggestions?

Based on my limited experience, don't do it. Beef sausage has always broken up into smaller bits which causes a less than desirable texture for the whole jambalaya.

You talking about this stuff? Always thought the only people who bought this were people up north who don’t have access to good locally produced smoked sausage.
