Any particular reason for Woodstock, NY?
Will you have a travel companion? If so, look into The Roxbury Motel in the Catskills. It's a bit wild, for sure. The town seemed perfectly quaint. Cooperstown is about an hour away, and I recommend Ommegang Brewery as a place to eat and drink.
Another place to check out is Saratoga Springs, even though it will be the off-season. Plenty of places to stay, eat, and drink there.

As other have mentioned Burlington and the surrounding area have great breweries to take a stop.
In Burlington, I like two restaurants in particular, the Sherpa Kitchen (sounds weird for Vermont, but the most authentic Nepalese food I have had in the US) and the Farmhouse Tap and Grill, for very good food but better beer list.
On the way to Montreal, my wife swears by Fromagerie au Gré des Champs for cheeses. When I lived in Burlington for a year, every time we went to Montreal we stopped off there.
