You can do a will with a notary but for no more than a lawyer should charge for a simple will I would pay it.

That said I know a man that died with a significant estate and simply hand wrote his will and had the witnesses sign and had it notarized. His thinking--right or wrong I do not know--was he didn't want a lawyer or a CPA to realize the size of his estate and create an estate tax issue. He had a lot of heirs and thus far the IRS has not approached any of them.
