LL, your enchiladas reminded me of El Chico's enchiladas. I loved those. I always got one beef with chili con carne and 1 cheese and onion with chili con carne. Together, the flavor and texture was delicious.

Funny you say that. El Chico is exactly what I was referring to when I chose this. It was my family's place of choice growing up.
