My kids teacher did this in first grade and it sucked. The teacher knew she wasn’t coming back so she missed multiple days every week . It would’ve been better for everyone if she’d just quit and take the sick leave all at once so the class could move on with a new teacher. Granted, middle school PE might not be as big a deal.

Also don’t forget , if you have 11 years in. If college doesn’t work out you might be looking for your old job back or want to come back and get retirement down the road. So I wouldn’t burn any bridges . Not that anybody would blame you for taking your sick days, but try to work it out best for all parties.
