If I shut the water off to my house at the meter before the freeze because I’m going out of town, do I need to do anything to a gas water heater?

No the water heater itself will be fine and will keep heat cycling the water in the tank. Turning the water off will not necessarily prevent a pipe from bursting but it will prevent your house from flooding if a pipe does burst.
