The secret service will absolutely shoot you even if acting in self defense against the President

I imagine you wouldnt even have to use self defense. Once they see the CIC engaged with you, your life is over. Maybe try to take the potato with you?

Federal law actually makes it illegal not to take you out
The President cannot legally waive secret service protection for any reason.
They would literally have to kill you if you got into it

.... why wasn't David Hinkley or Squeaky Fromme immediately taken out? They both attempted an assassination of a US President? They were physically restrained. Was the Secret Service just not doing their job by not killing them?
