Sear it hot and fast if you cut into steaks. Anything beyond medium rare and it gets tough, even with prime cuts. Best beefy cut of cow if you simply season and sear it.

Cut into steaks with the grain. Then I either sous vide or reverse sear.

I dont agree with either of the other replies.
i dont think sousvide works well, you need to sear and rest. but anything below med rare is to chewy, not like rare ribeye or filet. Picanha is best med to med +.
I do agree with cutting your steaks with the grain so when you are eating you are cutting against the grain.
