I'm heading to Bentonville in mid January. Can't help with Little Rock and Hot Springs, but this might be of interest to you.
Our trip is largely based around me cycling in the morning, and us exploring other things and eating out from lunch through the evening.

Other day time plans:
Crystal Bridges Museum
Walmart museum
Blowing Springs park
Pinion Creek falls

Tanyard creek falls is near pinion and blowing springs also. There is also the amazium if the children are younger.
Also Arkansas state parks are nice.
