I'm smoking a pork butt tomorrow. Keep the suggestions coming. I'm always tryign to find leftover ideas for pulled pork.

I smoke two at a time and vacuum wrap in 1.5lb bags, then freeze. We pull a bag out for dinner.
Another one we do are Cuban sandwiches

Pulled pork nachos are a favorite with the kids. Quesadillas for sure. Cuban sandwich.
