Need recommendations for the Texas Hill Country

Flights are pretty cheap (via Southwest) and I'm looking to take the girlfriend for an extended weekend 3, 4 day trip to the Texas Hill Country.

We've both been to Austin a few times (bachelor, bacherlotte parties) and I'd like to do something different.

Can any of you recommend some good towns or places to stay in the Texas Hill Country? What are some places to check out (food, low key bars, sight seeing and scenery, outdoors activities, music halls, etc)? Any wineries or breweries to check out? I'd like to rent a car and take in some great drives and views too.

I'm looking to make this more of a leisurely, relaxing trip which is why I'd like to stay out of Austin.
