Las Vegas in October.....

We will be there from a Friday to Monday. As of now, we plan to watch football all day and night that Saturday and Sunday at the Caesars Palace Sportsbook and bet on games and props.
Any recommendations besides this??

That's a pretty solid plan.
I recommend eating at Rao's for a meal if you can drag yourself out of the sports book.

Plan on arriving early to the sportsbook to get a seat. They have redesigned the sportsbook and installed a long bar in the sportsbook area. It eliminated some seating.

We are going October 7-10, so LSU is at Florida and the Saints have a bye.
I will definitely be taking the Florida ML as a hometown hedge. The last time I was in Vegas was back in 2007 and it was the Saturday LSU played Tulane and was losing at halftime I believe lol.
I was thinking about getting there around 7am on both days. That way I can watch the pregame shows. When is the best time to place my bets for the morning and early afternoon games?

As early as you can. The line gets unreal the closer to kickoff and you have the inevitable asshats looking to place parlays not knowing what they are doing.

It's Vegas. You're not going for the culture. Watch football, drink, eat, gamble and roam around when you have time. Go down to Freemont St., check out some of the newer strip hotels. The weather typically starts to get nice that time of year, so check the forecast right before you go. Just have fun.
