The Witchery in Edinburgh near the castle. We had lunch in the Dining Room, but there's also the Secret Garden or you could do Afternoon Tea.

Not recalling anything particular in Dublin, sorry. It's been a while.

The Kitchln in Edinburgh by the waterfront. We had an incredible meal there two years ago that my wife still talks about.

Edinburgh recs here. I researched a lot of places there. I wanted to take my daughter and 2 others to The Kitchin (Michelin starred) in Leith, but she vetoed it. We went to Noto (Michelin starred) in New Town instead as it had vegetarian options. It was fantastic.

Noto

The Bon Vivant next door for cocktails was top notch.

The Bon Vivant.

The Devil's Advocate in Old Town had good food and cocktails too. If you want a rec for a good vegetarian place near the Royal Mile, I can provide that. Bon appetit.

I second the Devil's Advocate and Bon Vivant in Edinburgh. Get reservations for both.

In EDB

Hawksmoor
Dishoom
Ivy
Guildform Arms for a beer or two

Be aware that all three restaurants have locations in major UK cities so they are not hyper local but are all very good just the same.
