Disney for one weekend in October - for 2 adults

Looking to do something different. Lived in Florida my whole life and haven't been to Disney since I was 7. Haven't been to SeaWorld since I was 9 (I heard they have rides there now). Never been to Animal Kingdom or any of the new parks.
Thinking about going for a weekend in early October (first or second weekend maybe). Thinking about maybe Animal Kingdom one day and SeaWorld the next. We're into animals and nature and stuff.
I'm seeing the Lodge which looks like a pretty cool place to stay. I'm sure it's expensive, but the girlfriend is getting the Disney itch all of a sudden, and I think it would be cool for one weekend.

Skip SeaWorld and do the 2nd day at the Food and Wine Fest at Epcot.

Epcot is a very busy resort in October on weekends. Food and wine festival can be miserable. Locals and Tourists pack that place.
Better to go as early as you can in September when the festival starts.
