Cruise out of Port Carnaveral in early October. Planning tips

Taking a Disney cruise for two out of port Carnaveral in early October. Cruise leaves on a Monday, plan on getting to cocoa beach late Friday before the Monday of the cruise. I'm thinking we will go to universal studios (we really like Harry Potter world) on Saturday and spend Sunday at the beach.
Cruise (4-day) is already paid for and we have a $3K budget for everything else. Does this sound like a solid plan?
What hotels would you recommend on cocoa beach? How is the weather in Orlando during October? TIA

We always stay at the Holiday Inn Club Vacations Cape Canaveral Beach Resort. It’s a great property. There’s a giant pool, lazy river, a four story water slide and a splash area for little ones. There’s mini golf, a game room, a fitness center, even a movie theater. The property is a vacation club, but you do not have to be a member to stay.

Sounds awesome. Think I can take advantage of everything it has to offer with only staying 3 nights but spending one day at universal and the other hanging out at cocoa beach?
