How is the best way to trade up from an iPhone 6 to an iPhone 6s Plus?

I have an upgrade with AT&T... Should I go through them or sell my old phone outright and buy new at $850???

Sell your phone outright if you want to get the most for it. Swappa is the best site I've used for selling phones. You can also use Craigslist if you want to save on Paypal fees and shipping but I would recommend meeting at an AT&T store to make sure everything goes smoothly. As far as buying the new phone it depends on what you want. Do you want to spend the full price now or finance it?
