CouchPotato and VPN - what's you're configuration?

I've got Plex running on an Ubuntu 14.04 server and want to utilize CouchPotato but want to do so behind a VPN without hindering the connection from my server to my domain. Anyone have a similar set up? I think what I need to do is run an Ubuntu VM to run CouchPotato with all traffic through the VPN...but I have little (no) familiarity with VMs or VPNs lol.
